Each learner has a profile that lists their enrollments with the state of each: in progress or completed, overall progress, credits earned against credits allocated, and the date they completed. From there you can drill into a specific course to see how they are moving through it lesson by lesson. Their profile also shows their custom profile field values, their roles, when they joined, and whether their email and phone are verified.
Progress is recorded per item rather than inferred from a last-seen timestamp. A video lesson counts as complete once the learner has watched enough of it, an article once they have read enough of it, a live lesson once they have attended, a quiz once they have a completed attempt, and an interactive package according to the score it reports. Those per-item records roll up into the overall progress figure and, where you have allocated credits, into the credits earned.
A platform-wide learner list shows everyone with how many courses they are enrolled in, their roles, and their displayed identifier, which can be your own field such as employee ID. Search it, open anyone, and see their record. Where a learner needs to come off a course, an administrator can unenroll them from it directly.
Learners have the same view of themselves: their courses, their progress, their credits, and their certificates. That removes a whole category of support request, because the person asking how far through they are can simply look.
